Cheesey Leek and Bacon Quiche


Our venue guests were in for a treat this week; in preparation for their hot buffet I rustled up one of my favourite quiches – Cheesy Leek & Bacon.


Having pre-baked my shortcrust pastry case (12” x 9”), I took some of my leeks from the veg patch, gently fried them for 5 mins, then popped them in the base, together with about 5 oz mature cheddar and fried bacon bits.


I then poured over 10 fl oz milk with 4 whisked eggs. A dash of salt and plenty of black pepper, then into the oven at 180 degrees for about 30 mins.
